PLT – Potato, Lettuce, and Tomato (Starch Solution diet)

I’ve briefly mentioned this before, but I’m currently on a Plant-Based, whole food, Diet called, The Starch Solution by Dr. John Mcdougall. I learned all about this diet from Following Plantiful Kiki and High Carb Hannah, both on YouTube. If you are interested in learning more about The Starch Solution, I found THIS VIDEO to be very insightful.

Maybe one day I’ll share an update on my weight loss journey, but for now I thought I would just start by sharing some of the recipes that I have made and enjoyed. I’m finding it quite fun and exciting to come up with new “starch-solution-approved meals.”

I plan to share all of my “Plant Based” meal ideas under the Recipe tab found at the top of this blog, but please don’t feel like you have to follow the diet to enjoy any of these recipes. They are healthy meals for everyone.

Okay, so moving on. I made this HUGE plate of potatoes for me the other night for dinner and I gobbled it all up in one seating. It was so good that I knew that I had to share the recipe with ya.

I’m Calling this dish PLT for Potato, Lettuce, and Tomato.

I started this dish off by cutting up about five medium sized cooked potatoes. I like to cook my potatoes in a crock pot. I always fill my crock pot up to the top with potatoes that I have washed and cut in half. I like to use a variety of potatoes mixed together, like Russets, Yukon Gold, and red potatoes. I also add about a cup of water to the crock pot. I set my crock pot to high and let the potatoes cook for about three hours. Easy Peasy!

If you don’t have a crockpot you can bake your potatoes in the oven or insta pot. For oven bake at 425 for 30 – 35 minutes.

Next, I seasoned my potatoes with garlic salt, pepper, and a drizzle of Ketchup.

Next came all of the toppings:

  • Vegan Cheese sauce ( I use THIS Recipe from Plantiful Kiki)
  • Shredded lettuce
  • 1 Large tomato – diced up
  • Hamburger dill Pickles – cut into bite size pieces.

Note: If you’re not on the starch solution diet, try substituting the vegan cheese sauce for a nacho cheese sauce and sprinkle on some bacon bits. Not as healthy, but I’m sure it would be delicious 😉
