PoBoy Popcorn Chicken Sandwich Wraps

I have a yummy recipe to share with you today, it’s for my Po Boy Popcorn Chicken Sandwich Wraps. Jake and I have been eating these for lunch for the last two days now and so I thought I’d just quickly share my recipe with you. Jake usually makes these for us using your typical hoagie sandwich buns but we are out of buns right now and so my version is a wrap. You can make these either with hoagie buns or flour tortillas, both ways taste great. Wraps are just kinda my thing.

I was inspired to make these wraps after my online grocery order substituted buffalo chicken wings with popcorn chicken. I love online grocery shopping, but I have to say, sometimes their substitutions baffle me. HA! But I will happily take what they give me if it saves me from having to go into the store. Grocery Shopping is not my favorite.

Ingredients

  • Frozen Popcorn Chicken
  • Yellow Onion – diced
  • Tomato – diced
  • Mayonaise
  • Shredded Lettuce
  • Creole Seasoning
  • Flour Tortilla Wraps or Hoagie buns
  • Pickels (Optional)

Directions (this makes two large wraps)

  1. Cook Popcorn Chicken according to package. I like to cook it in our air-fryer. Cook about 10 pieces per person.
  2. While your chicken is cooking, dice up onion and tomato. I used one medium sized tomato and about 1/3 cup of diced onion, but you can use however much or little you like. Mix the diced tomatoes and onions in a large bowl along with mayonnaise, and creole seasoning. My husband loves Mayo and so I used about 1 cup. I used 1/2 tsp of Creole seasoning. Go Easy on the Creole seasoning because it can be spicy. Again, with the Mayo and Creole use as much or as little as you desire.
  3. Once the popcorn chicken is cooked, add it to the bowl and mix together. If you have larger pieces of popcorn chicken, you can cut them into smaller pieces.
  4. Add your chicken salad mixture to the center of a wrap (or on a hoagie bun) . Top with shredded lettuce and pickles (optional). Wrap your tortilla up tight and cut down the middle.

I served these wraps up with some Dill Pickle flavored potato chips and I thought it was a perfect combination.

These are really yummy, I think I need to put more popcorn chicken on my online grocery list…..and Just watch they substitute the popcorn chicken for some buffalo chicken wings. LOL. Wouldn’t that be funny?
