I Love Love Coconut!
The boy’s and I made some coconut cupcakes for our Easter dessert. They turned out pretty tasty and so I wanted to share the recipe with you all today.
Coconut Cupcakes
1/2 cup butter, softened
1 cup sugar
1 egg
1 egg white
1/2 tsp vanilla
1 cup coconut milk
1 1/4 cup flour
1 cup shredded coconut
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
In a medium bowl combine the flour, baking soda, baking powder, and salt. In a separate bowl, cream the butter and sugar. Beat in the egg and egg white. Add the vanilla, and coconut. Mix well. Add in the flour mixture alternating with the coconut milk.
Fill paper-lined muffin cups with 1/4 cup of batter.
Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean.
Makes 12 cupcakes
Coconut Frosting
1/2 stick butter, softened
1/2 tsp vanilla
1 1/2 cups powdered sugar
2 tbs coconut milk
Beat all ingredients together until creamy.
Coconut Topping
Toast 1 cup of coconut in fry pan over medium heat, stir constantly until lightly brown. Let cool, then sprinkle toasted coconut onto cupcakes
