I combined two of my fall favorites; fresh from the orchard apples, and a hearty bowl of chili and came up with this recipe I call,
Apple Chili.
If you follow me on Instagram, you may have seen a picture I posted of some beautiful freshly picked orchard apples.
I actually won a bushel of apples in an auction over the summer and had been waiting patiently for them to be ready so I could go pick them up.
I went with 1/2 bushel of golden delicious and 1/2 bushel of red delicious.
Don’t know how much is a bushel?…I didn’t either…. well it’s the size of two refrigerator drawers 🙂
And as you can see we love apples at our house.
We like to put the Lighthouse apple cider in the freezer for a couple of hours, just to get it slushy…. so delicious.
We also love our Angry Orchard hard cider.
Apples are a fall favorite for me.
Which brings us to my recipe for Apple Chili.
Apple Chili
1 lb of hamburger
1/2 cup of frozen (or fresh) onions
2 tbs garlic
2 cans of black beans
1 can of red kidney beans
1 can (14 oz) diced tomatoes
1 can(14 oz) tomato sauce
1 bunch of cilantro, shredded
2 large golden delicious apples cut into bite size pieces
1 tsp chili powder
1/2 tsp ground cumin
1 tsp taco seasoning
1/2 tsp steak seasoning
Salt and pepper to taste
grated cheddar cheese
In a large pot over medium heat, combine garlic and onions, cook until lightly brown. Add hamburger. Once hamburger is browned add seasonings: chili powder, cumin, taco seasoning and steak seasonings.
Then add apples, cilantro, beans, tomatoes and sauce.
Cover and simmer for 15 minutes.
Serve with grated cheddar cheese.
