Toasted Coconut Banana Bread Recipe

There’s nothing quite like the smell of fresh banana bread baking in the oven. It’s one of those simple, comforting recipes that always feels like a treat. This time I decided to add a little twist by mixing shredded coconut into the batter and sprinkling more on top before baking. The coconut lightly toasts in the oven and gives the loaf a beautiful golden finish along with a hint of tropical flavor.

Using Up Ripe Bananas

This recipe is also perfect for those moments when you notice a few bananas on the counter getting a little too ripe. Instead of letting them go to waste, banana bread is the perfect solution. The softer and sweeter the bananas become, the better they are for baking, giving the bread extra flavor and moisture.

Ingredients

  • ¾ cup all-purpose flour
  • ¾ cup oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ stick butter, softened
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • ½ tsp vanilla extract
  • 3 ripe bananas, peeled and mashed
  • ⅓ cup Greek yogurt (can be substituted for sour cream)
  • ½ cup shredded coconut (plus more for sprinkling on top)
  • ½ cup chopped walnuts(optional)

Directions

  1. Preheat oven to 350°F.
  2. Spray a loaf pan with cooking spray.
  3. In a mixing bowl, mash the bananas.
  4. Add the remaining ingredients and mix with a hand mixer until well combined.
  5. Transfer the batter into the prepared loaf pan.
  6. Sprinkle extra shredded coconut on top of the batter.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool before removing it from the pan and slicing.

Coconut Topping

As the banana bread bakes, the coconut on top begins to toast and turns a beautiful golden brown. It gives the loaf a slightly crisp topping and adds even more coconut flavor. Toward the end of the baking time, it’s a good idea to keep an eye on the bread so the coconut doesn’t burn. If it starts to get too dark, you can loosely place a piece of foil over the top while the bread finishes baking.

Serving Suggestions

This banana bread is delicious served warm with a little butter spread over the top. You can also try it with peanut butter for an extra rich and satisfying flavor.

Because the bread is sweet and soft (almost a little like cake) it also makes a wonderful dessert. A warm slice paired with a scoop of vanilla ice cream is especially delicious.
