The other day I was planning to make a simple dinner for my husband using what we already had on hand. I spotted some potatoes and polish sausages and figured a basic sheet pan meal would be perfect. I roasted the potatoes first and then added the sliced sausage to finish cooking. When I pulled the pan out of the oven, my husband looked at it and said, “Oh yeah… I’ll take mine with nacho cheese mixed in.” I definitely wasn’t expecting that! But the potatoes were so hot straight from the oven that when I added a few scoops of nacho cheese sauce and mixed everything together, it warmed up instantly. What started as a simple sheet pan dinner turned into a cheesy, hearty meal that my husband and son both loved.

Ingredients You Will Need:
- 8–10 Idaho Russet Potatoes (Because I’m an Idaho girl, I have to recommend using Idaho potatoes!)
- 3–4 pre-cooked beef Polish sausages (about ¼ lb each). I used the Kirkland brand from Costco, but any hot dogs or sausages will work.
- 1 cup nacho cheese or queso dip
- Olive oil
- Salt and pepper
- Elote seasoning or another Mexican-style seasoning blend
Optional Toppings:
- Cherry tomatoes
- Jalapeños
- Sour cream

How to make this Sausage and Potato Sheet Pan Meal:
1. Preheat your oven to 425
2. Prepare the baking sheet.
Lightly spray a large baking sheet with cooking spray.
3. Cut the potatoes.
Wash the potatoes and cut them into bite-size pieces.
4. Season the potatoes.
Spread the potatoes evenly across the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and your favorite Mexican-style seasoning. I used an elote seasoning.
5. Roast the potatoes.
Place the pan in the oven and roast for 15–20 minutes.
6. Add the sausage.
Remove the pan from the oven and give the potatoes a quick stir. Add the sliced pre-cooked sausages to the pan.
7. Season again.
Drizzle a little more olive oil over everything and add another light sprinkle of seasoning. Mix everything together.
8. Finish baking.
Return the pan to the oven and cook for another 15–20 minutes, or until the potatoes are tender and slightly crispy.

Add Nacho Cheese and toppings
As soon as the pan comes out of the oven, scoop several spoonfuls of nacho cheese (queso) over the hot potatoes and sausage, then gently mix everything together. The heat from the potatoes warms the cheese perfectly without needing to heat it separately. To serve, spoon a generous portion into a bowl and top with sour cream, sliced cherry tomatoes, and jalapeños.

Make it your own
These were the toppings we liked, but this is one of those meals that’s easy to make your own. Feel free to get creative and add whatever toppings your family enjoys. Things like green onions, avocado, shredded cheese, or even a drizzle of hot sauce would all be great additions.

Why I like easy Sheet Pan Dinners
For starters, they really are easy. It’s the kind of meal you can throw together, slide into the oven, and not have to overthink. If you start with a protein and add one or two vegetables, you already have the makings of a simple, hearty meal. I also love how customizable sheet pan dinners can be. You can change the seasonings, sauces, or toppings and end up with a completely different flavor each time. I have a feeling there will be many more sheet pan dinners in my future.

This easy sheet pan dinner turned out to be such a hit in our house. It’s warm, hearty, and perfect for those nights when you want a simple meal without a lot of work. And once the nacho cheese gets mixed in, it really takes the whole dish to the next level!
